Manic Monday

Wilco was amazing last night!! It was my first time to see them live, Cain's was packed, and I was with my brother. GREAT NIGHT!!


Great nights are often followed by a long day when you are an adult, boo!! Add a late night to a broken air conditioner, Monday in general and problem city in dental world.


Cody worked all weekend, so I did not get to try any recipes. However, Sammie has my inbox full of recipes to try. I'll do my best. I did cook yesterday before the concert. Home style tacos!


I'm so proud of my couch to 5K class. We started week 5 today, everyone did so well. All my participants are still coming and giving it their best.


I'll be staying home more this week and cooking, I promise to get some recipes up soon. Today I did start my diet off well. GT/PS/B, yogurt and apple for a snack, salad for lunch. I have to stay out of Sammie drawers this week, he he!! Bombed dinner when I ate at the Brook w/ my parents. Tomorrow is a new day!

GOOD FRIDAY!!

Today was such a great day! I picked up my SLF (special lady friend) at Chris Nikel's and we headed to the river. Completed my week 2 homework at Riverside this morning. It was a beautiful day AND we decided to walk an extra 4 miles. Couch to 5Kers, in week 2 your 2o minute walk/run is the equivalent of 2 miles, wow!!

Lunch at Old School Bagel, I had the egg salad on an everything bagel with a berry cup. I had requested a whole grain everything bagel (it is the BEST) and they were out! Must have been a busy morning at Old School Bagel?! SLF and I sat on the patio, it was so relaxing. Drank our waters (SLF is knocked up) and had lunch.

SLF also approved two new swimsuits for COSTA RICA!! Also two dresses and veto'd some shorts. Then I dropped her off, hit up the USPS, the Gap (return), Walmart trip one at Admiral and Memorial . . . yikes, Walmart trip two at 68th & Memorial, Reasors, liquor store, house cleaning, study, dinner and blog. Spin tomorrow AND Easter with my family. I'm so excited about Easter, we're watching OU play Texas A&M in women's softball. SO EXCITED!

Diet: PS/B/GT for breakfast, egg salad bagelwich w/ mixed berry cup for lunch . . . run errands like crazy . . . snack along the way - Starbucks sleeve of cashews and a Venti green tea . . . Dinner - veggie whole wheat pasta

Not so Man . . . Whole Wheat Veggie Pasta (VS. Man Pasta)
Begin water boiling on the stove

Slice 1/3 a white onion
Slice 6-8 crimini mushrooms
4 Roma tomatoes

When water is boiling, add 5 handfuls of whole wheat penne pasta and set timer for 6 minutes. When pasta is done boiling, strain and set aside. Rinse w/ cold water to maintain texture.

Begin to heat EVOO two turns in a large skillet, add white onions over low heat


  • Cook onions until they are beginning to go clear in color and add mushrooms, two Tbls of minced garlic (from the jar), and 1 Tbs of salted butter. Simmer 2-3 minutes.

  • Optional - add 1/2 cup of white OR red wine while simmering

  • Wilt spinach over the top - 2 or 3 handfuls

  • Add pasta into skillet and 1 Tbs of butter

  • Juice one lemon and add to skillet - stir evenly

  • Optional - add Parmesan cheese to taste 1/4 shredded small container

  • Salt and Pepper to taste, dress w/ fresh or dried basil

Grocery List: 1 medium white onion, 1 bag of baby spinach cheapest they have all the same, 6-8 cremini mushrooms, (ANY VEGGIE YOU WANT TO ADD), 4 Roma tomatoes, 1 lemon, penne whole wheat pasta, minced garlic (in a jar - usually by the fruits and veggies at the store), salted butter. Meal Cost - $20 feeds 3-4 or 2 and leftovers :) Man Pasta option - add 1/4 lb of Italian Sausage.


I did have a glass of Concannon Pinot Noir (and used for cooking) it's found w/ the other Pinot Noir's around $12 for the bottle at my particular liquor store. Would not pay over $13 for this bottle. Splurge wine - VanDuzer Pinot Noir, closer to $30 but will not disappoint.

Yoga

So good for you!

Can I just survive through finals?!

You ask Jami, have you not eaten since grilled veggie tacos?? But of course!! Since veggie tacos I've worked on two presentations for class, started couch to 5K at the Y, GNO'd, waited for a plumber, I would go on but I'm losing you!!!

I'm committed to be a better blogger after finals. I swear it!! I am re-committing to daily blogs and I am not committing to blog length. If you just joined and think, dang that's alot of exclamation points . . . please read earlier blogs and accept another very sincere apology for my blatant abuse.

Food: Today I PS/B/GT (protein shake, bacon and green tea), for a snack around 10 I had three apple slices and half a granola bar. Cody finds it amazing that I can eat 1/2 a granola bar, he teases me "Yeah, you better wait and see how that first half hits you." Back to the diet!! For lunch I had organic girl salad mix with coin sliced carrots (peeled this morning - HAVE to use REAL carrots) leftover pasta salad from the weeny roast, green onions, hilshire farms deli sliced roast chicken, 2 tbl spoons of blue cheese and stolen french dressing belonging to Tammy Goad (love you Tammy) It was only a tiny bit, I promise!! For my afternoon snack I had a lowfat yogurt and the other half of my granola bar. Tonight was GNO - we are on hiatus from Real Housewives b/c of couch to 5 K . . . which I could not be happier about b/c my friends are making me so proud . . . so we ran at class and headed to Marley's. YES, I had pizza, a dinner salad, and apps - THE SHAME. But it's the time of week I get to be selfish and enjoy some of my favorite people!! No dessert, no alcohol, weight loss plus!!

Education: One lecture to go and the final is two weeks from yesterday. I have almost survived, I'm so close, I better start studying!!

Grilled Veggie Tacos

Not ground breaking, just way better than I expected and super easy!! I used: Portabella mushrooms -2 Large Red bell peppers - 1 medium sized one White onion - 1 baseball sized Zuchini - just one Trim the porabella, clean and cut the bell pepper in half, cut zuchini into thick coin shaped pieces, and skewer 1/2 onion. Drizzled with EVOO, salt and pepper to taste. Grill veggies on medium heat, placing the onions on before others. Optional - lettuce, avocado, salsa, hot sauce, raw onion (the other half), sour cream, sharp cheddar cheese, a can of pinto beans. You will also need - any type of tortilla. I would use corn tortillas, but if you want it to be like a burrito - wheat flour tortillas. If you want burritos, mash pinto beans. You'll want to: Turn on the grill to heat up If you are heating beans, place them on low heat Chop all indgredients Grill veggies, start with onions, let them cook for 10 minutes, then grill the rest of the veggies. While veggies are cooling, heat torillas on the grill or in a skillet. All together about 30 minutes to prepare.

Time to Tighten the Belt

8 weeks until Costa Rica. That's not an official count, but that's what I have been thinking in my head all week. Friday is April 1st, only leaves two months to be beach ready!! I have been eating salads everyday for lunch. That is always key for me when trying to lose weight. I have been very diligent about going to the grocery store, packing my snacks and trying making healthy choices. Thanks to the 2nd job at the Y, I haven't skipped many workouts either!! Gut check time, realistically I'm looking to lose 15lbs before Costa Rica. My sacrifice, social drinking. With the exception of finals week (oh, i just felt a stab of anxiety) NO DRINKY DRINKY!! I calculated the following to keep me motivated: 6 drinks a week - don't judge! At an average of 110 calories per glass of white wine (my dear friend) I'm saving 5280 calories over the next 8 weeks!! Go me!! I'm also committing to Monday runs - how I loathe 5:15 on a Monday morning, lifting weights no less than two times a week, AND more YOGA. I can change tomorrow, I can even reset in the middle of the day if needed. It's not about where I came from, it cannot be changed. It's all about where I'm are going, how hard I'm willing to fight. Making myself a priority is one of the biggest challenges. If I can do it, you can do it. I see it everytime I'm at the Y. Start with 30 mintues two times a week for yourself. Find the time, make the time. Ok, one recipe and off to bed!! I should be doing a playlist, Thursday spin will be upset :)

Hump Day is Oh VUR!!!

What a long week, and it's only Wednesday. Monday was a LONG day, end of the call period at work, Monday no fun day, I didn't exercise . . . boo!

In retrospect, I finished last week strong. Nina and I ran 4.5 miles at Riverside. It was amazing weather and we had a great run with my boyfriend Bentley (don't tell Karl!). Ashley and I walked Lafortune on Tuesday, and tonight we did an hour spin class with abs and push-ups afterwards.

Mid-week inventory: Need to work in more running, I want to lift tomorrow, also need to find time for yoga. Diet is going so-so, I need to cut down on my sugar intake this week. I cheated and had dessert Sunday and Monday, oh the shame!!

I feel extra spoiled that I will see Billy, Marty and LL two weeks in a row!! Thinking of some heatlhy dinner ideas that are budget concious to share. We'll see what I come up with by Friday. I promise a recipe and pictures!

In the past week, I have been thinking about friendship alot. Friendship is so important and so hard to maintain. It's true how friends come and go, old friends, close friends, co-workers, mutual acquaintances. I am happier with my life when I surround myself with people who better me, people to challenge me. Challenge me to be bold, selfless, humble, prideful, kind, sincere, heartfelt, honest, humorous, responsible, healthful, beautiful, reserved, private, family oriented, patient, trustworthy, benevolent, or to be better than yesterday. Today I am greatful for my friends, not matter how near or far.

Marty Walton - Human Disaster

Okay, so the title of this blog isn't really that funny given the current state of things however... for those of you who watch Parks and Rec (one of my fav shows ever) the past two weeks have been much like that of Ben Wyatt unraveling in front of all of Pawnee. 
I've been so out of whack lately with a lot of things in my life so I'm definitely in need of some recommitment and I'm super excited that my personal motivator, Jami is coming in town to kick my butt.  
I've been really sick lately with bronchial issues so my plans to start couch to 5k with my running buddy Lisa had been foiled.  However, Sunday I'll jump back on that horse and hopefully be ready for the Memorial 5K http://www.okcmarathon.com/5KMemorialWalk/tabid/56/Default.aspx 
Eating has been somewhat okay.  I've been so busy at work I've been skipping lunch which isn't great but at least it's less calories then choosing something fast and quick and bad for me.  However, I will say i do have a mild obsession with a certain girl scout cookie and Samoa is her name... yummy yummy yummy but not good for the weight loss.  Did you know 2 (2 tiny tiny) cookies have 140 calories, and 7 grams of fat! Two cookies!!! I could have 3 cups of yummy delish halved fresh strawberries for 146 calories and 1.4 grams of fat totally would have been the better choice. 
I have been watching my portions of what I eat so that is going well.  I've also been trying to drink all of my water for the day.
So, while i have fallen of the wagon it wasn't a totally bomb rolling dive off the wagon into a pile of mud. 
I'm really going to work on making choices that are better for me for the right reason. Like, yea right now I could go out to the vending machine and get myself some super yummo junior mints and it might make me feel happy in that second to make that choice but wouldn't I be happier in a couple of months when I've shed some pounds and I'm much happier with my life and the way I look?? I think so, and because of that I'm off to go get some celery to snack on.

Thank you everyone for your support and for understanding my humanity and falling off the wagon so early.... but I'm back baby dolls.

Baked Potato Frittata

Just in time for the weekend!

I saw this recipe and chose it for my special lady friend's birthday party. She is pregnant and very into breakfast foods right now. My inspiration was a recipe from the Williams Sonoma catalog, I just adapted it to accommodate on large skillet instead of a frittata pan.

Prep time - night before 45-50 minutes/day of 15 minutes

The night before :
Preheat the oven to 400

In a bowl stir 1 Tbs. of olive oil over 6-8 Yukon Gold potatoes and season with salt and cracked pepper

Transfer potatoes to a cookie sheet

Bake in the oven at 400, for 30 mins - let cool for 30 mins and refrigerate

When the potatoes come out of the oven, place one package of bacon in the over for 8-10 minutes, do not cook all the way. Drain immediately and let it cool 10 minutes.

While the potatoes are cooking, chop 1/4 a cup of chives, cover a refrigerate.
Shred 1 block of sharp cheddar cheese, cover and refrigerate.


The morning of your breakfast/brunch:
Preheat your over to 475

Reserve cheese, chives and bacon for the top of your frittata.

Mix 8-10 eggs in a bowl with remaining amounts of cheddar cheese, chives and add 2 Tbs. of sour cream, salt and pepper, to taste (your normal amount).

Slice the potatoes into thick chunks/1 inch dice
Heat them in a large skillet over medium heat with a turn of EVOO for 3-5 minutes or desired crispiness.
Add 3-4 slices of bacon, chopped, to the pan and heat an additional 2 minutes.
Add your egg mixture and lift egg away from edges for 2 minutes over medium heat
Reduce your heat slightly and cook mixture another four minutes
Place entire skillet in the oven, checking at 8 minutes
Continue to cook another 4-6 minutes - the top should barely begin to brown
Remove from oven and top with reserved cheddar, chives and bacon

I cut the frittata into wedges and served with raspberry parfait, pastries and mimosas!! YUM! Happy Brunching!!

Other ideas: frittata w/ spinach, mushroom and sausage . . . I'll report back!

Cookie is coming to town . . .

My re-commitment week is going really well! I have eaten a salad every day at lunch this week (so sick of salad), I ran 30 minutes Monday , 10 minutes after spin n(45) on Wednesday, and Lift (30) and Spin (45) today. It was really good to lift again, it's been several weeks. I missed my synchronized weight lifting partner - I am in no way kidding! Also excited because I am planning on doing Yoga at the Yoga Room in Tulsa tomorrow. That is the best place EVAH!! So relaxing and the instructors there are AMAZING! Plus a long run planning with Nina on Sunday, hope it works out!!

My nights have been tough, I had dinner with my parents Monday = cheating. Tuesday was better because Cody cooked a healthy dinner. We had grilled chicken topped with sauteed onion and orange bell pepper, pinto beans, salsa, and fresh avocado. Wednesday totally cheated at GNI (Real Housewives watch party AND pizza), but tonight was good egg whites spinach and salsa.

I have been looking forward to seeing Billy, Marty and Lorelai all week! This Saturday is my only day not to teach spin Saturday so I'm going to go stay the night. I always liked it when my family visited when I was a kid!! Reading her a bedtime story was too much fun last time!! Billy told me today we are going to watch OU gymnastics with Lorelai and see the grandparents, so excited.

Ok, I'm going to do the frittata and chicken recipes now while I'm thinking of it . . . if you try them . . . ENJOY!!

New Week Reset

Ok, last week was very crazy. Cody was the best man in a wedding SUNDAY night. We had the BEST time, but it really threw our week way off! I didn't get to pack my lunch AT ALL last week. That leads to a diet catastrophe. Without a packed lunch I'm left with choices, no snacks and an excuse to cheat. Tuesday was my first grad school test, ugh!! I don't have my grade, not checking, just moving on to the next project. Every night this week I had plans, which is also a diet catastrophe! Although I had a poor nutritional week, I did work in spin Monday, spin and agility Wednesday, spin Thursday, running Friday morning w/ yoga in the afternoon and spin on Saturday. I'm spinnin', I'm spinnnin'

My blog today is about re-committing. Recommitting to preparedness in my diet and recommitting to more running activities this week. I am also committed to no empty calories through drinking and at least two nights at home this week studying and eating egg whites. The word glamorous comes to mind, hmmm.

I will still have cheat night a GNO on Wednesday!

On the upside, I hosted a brunch for Ashley's birthday yesterday. I made yogurt parfaits with a baked potato frittata! Everything was wonderful! The three pitchers of mimosa's for the non-prego's helped! I'll get the recipe up this week with the pictures I took.

Thursday - Day 4

Ok, I'll keep this short and sweet tonight! I bet you will never guess what I had for breakfast . . . I'm starting to feel like a Jersey Shore cast member GTL or PBG . . Protein shake, bacon and green tea!

At lunch, I had a salad downstairs because I was out of groceries this morning and running late. Thank you large semi-truck stuck on I-44 and Yale. It was full of meat, yes meat. It was on the bridge for over 5 hours today. Crazy!!

Ashley and I had planned to have a healthy dinner at Chicken Char in Bixby. After spin, we drove to the vacant spot that used to be Chicken Char. We were able to cope by eating Rex's chicken across the street ... FAIL!! I did drink water, that's 3 days of no alcohol. Technically four since Monday was one beer.

I did 45 minutes of spin today followed by three sets of 20 push ups, 20 lunges and 20 dips!! Tomorrow is Yoga after work. Saturday I'm teaching spin at 9 and thinking I might run 15 or 20 minutes afterwards.

Marty and Billy, have a good Friday! Love you!! Keep trying everyday . . . everything counts.

Sometimes you have to sleep in

So, I let myself down and slept in today and I'm not going to get a work out in this morning… boo! 
But, instead of listing an excuses.  I'm going to instead to commit to saying. I will MAKE myself walk at lunch and workout after Lorelai goes to bed tonight no excuses!! 
I'm already posting this because I want to make myself accountability.  
As the great Miley would say "Ain't about how fast I get there, Ain't about what's waiting on the other side..It's the climb"

Day 3 - Marty

I'm keeping this entry short and sweet, it's past my bed time ;)

My day started off amazing.  Lorelai was being very sweet and loving and asked that we started our day off with a a big family hug.  It's really was a moment of this is why I want to do this so I can start every day  off with a big family hug (same size hug smaller waisted family).
I got up at 4:15 did a work out at home since the access card issue hasn't been resolved.  I did the 40 minute work out on wii EA Active… which may sound super easy but... it's not when you haven't worked out in a while.  I felt like it gave me a pretty decent work out.
Then I had my shake for breakfast on my way to work, grapes for a early morning snack… too busy for my lunchtime shake but had a small slice of cheese and two whole wheat crackers in the late afternoon just so I would have something in my tummy and not be starved by the time I get home.
Leftovers for dinner but stuck to the small portions.
Drank all my water today.. yipeee!!!

Thank you Jami for this awesome idea I think it's really going to help.

Also, thank you to our friends who are following and supporting us and helping us stay on track.

Girls Night . . .

I gotta say, today was a good day!! Breakfast was the norm, you will get so tired of seeing it :) Metagenics shake, bacon and green tea. Apples with raw almonds for a snack. Lunch was a salad with grilled chicken, cheese and dressing cody made, yum!

No run ins w/ the police today and not a jacker in sight . . . it was however girls night! The best night of the week. Tonight Chad, Will, Nina, Ashley and I ate at a girls night crowd pleaser . . . Laroma. First of all, I know pizza two nights in a row NOT diet friendly. BUT, I did drink water, and the pizza is so delicious. I'm planning on being really strict the rest of the week and GNO is always cheat night (contributing to the overwhelming feeling it's the best night of the week).

If you live in Tulsa and have not tried LaRoma, go right now! Well, not if it's after 8pm, but go your next opportunity. Their pizza is so unique and delicious. The atmosphere is very family friendly and the owners are always there. I alway feel great about supporting their business and in my opinion a Tulsa legend. While it's not a romantic getaway, it's a great place to enjoy your friends where you can hear them and be treated just like family.

For workout tonight, I taught a 50 minute spin class. Tomorrow's plan is 50 minutes of spin AND lifting. I'm thinking I can squeeze some yoga in Friday too.

Day 2 Disaster - Marty

Thank sweet baby Jesus in the manager with a tuxedo shirt on today is over!!
Let's just about how life wanted to mess with me today…
I woke up early to go to the gym… WOOOOOOOOOO!!!
My access card at the gym didn't work….. FAIL!!
Decided to turn a negative into a positive, went home and started to walk around the neighborhood… Wooooo!!!
It was so cold I  started to freeze so bad i thought i was going to die…. FAIL!!
Remembered to bring my walking shoes to work for on my lunch break… Wooo!!
Was so busy I didn't get to take a lunch… FAIL!!
It was crazy party day at my work a birthday party and a employee recognition (woo for Adrienne!) watched my portions… Woo!
Ate a cake ball… FAIL!

Thankfully, Billy was nice enough to make dinner while LL and I were at Jazzybugs.  We are still trying to use up all the groceries in our house since we are on a financial freeze.  Which means for now i'm really trying to work on portion control instead of really modifying what I eat and I passed that tonight.

Billy made a meatless Ziti with whole wheat pasta and reduced fat cheese.  It was super yummy and I used a little plate to keep my portion size down… so Wooo!

Tomorrow is another day and I'm going to rock it out maybe like a rock lobster???
Oh, and I also had to do a class project for LL coming up with things that start with the letter L and let me just tell you I'm now in love with lobster dog!!

Victim of the $5 Pizza - Thanks Joe Mama's

Well, luckily you can get on and off the wagon . . . I started off great with my run this morning, and a yummy taco salad at lunch. The afternoon was a different story, I stumbled with a miniature kit kat, chocolate and one starburst. Those are going in the trash tomorrow!! Too much temptation at my desk with leftover Valentine's candy.

After a SMALL nearly unmentionable run-in with the campus police, I sat through class with a grumbly tummy. THEN, Ashley suggested going out for dinner, THEN I just happened to remember it was $5 pizza's at Joe Mama's in Tulsa. My plan was to eat half, but it was too yummy and personal sized!! It was gluten-free, bonus!! I did not drink, well I guess water does count as a drink so I did have A drink. All in all, not the worst day ever. Looking forward to getting back on the wagon tomorrow.

Tomorrow is a healthy eating day, except girls night. But I do enough talking to offset any eating! I also have my duathalon training class that I teach at the Y. That's always good for some extra calorie burn!!

I'm so glad we are doing this blog!!! I will start to work on more recipes, give me some frozen indgredients, I'll see what I can turn out!!

And my thought of the day "There's a skinny girl that lives inside me, I usually shut her up with cookies" -I saw it on sign at the salon, a KEEPER!!

Billy pack snacks, it makes me sad you are hungry!! Marty, I really liked how you have considered other times in your workout. Pretty good idea to be flexible with LL. Just keep movin'!!

Day 1

Day 1 is just like any other day for me. Tonight, I will be working out as long as my key card works. If it doesn't looks like crunches and perfect push-ups (thanks, Marty) at home. Today, I will be watching how much I eat as opposed to what I eat. This means I'm having to tough out the hunger pains. I really should have packed a few extra snacks for between meals to quell this hunger. Lesson learned. While transitioning into my new healthier lifestyle, I'll be trying to control my portions in order to clean out the "unhealthy" food in our house. I'll have to be creative in order to do this, but I'm confident.

I'll be easing into my new workout routine as well. This will be difficult for me since I have little patience for things like this. Going to work on cardio at first and get myself back in some kind of shape before I start sculpting the bod. Do Work, Son!
Dear How I met my healthy lifestyle,

thank you for getting me out of bed at 5:15 this morning so I would not be shamed by reporting I did not run!! 33 minutes on the treadmill, one protein shake, three slices of bacon, a green tea AND I'm about to eat my apples!! :)

Day One - Marty

Well… day one wasn't anything to write home about for me.  Which is ironic since… i'm writing home about it.  Monday is always my off day to work out.  It use to Friday but I would always find myself not working out on Monday so I decided if I'm going to make it work I need to work within my parameters.  So, I switched my off day from Friday to Monday. 
Food went pretty well for me.  Started off the morning late with my Metagenics shake at around 11. Then I had another one at 2:30.  I had my snack around 3:30, which was a green apple…. yummo!

For dinner we went pretty basic.  As I've mentioned in our bio we are working off a very small budget as we are trying to save up for somethings to celebrate (like our 5 year anniversary and our trip in June… wooo!) and pay off the debt we have gotten ourselves into.   So, our first step in squeezing ever cent we have is a spending freeze.  We are trying not to spend any grocery money until we use up everything we have in our house.  My grandfather had generously sent us some omaha steaks and salmon a while back so I thawed the last of those, heated up some whole grain brown rice, and then made a steamer bag of target/archer farms veggies.  Nothing fancy or big, but plain, simple and good.  I always try to balance out my plate with way more veggies then anything else. 

Part of my healthy lifestyle change is to stop sitting on the couch and watching TV after dinner/Lorelai goes to bed.  So, last night I did some chores around the house and put some clothes away but then of course i got sucked into the bachelor… hello it was home visit week.  I have to keep some perspective you know ;)
Thats it for my first check in… here is hoping for a better today tomorrow.. guess its not really about hope is it more about will power and How bad do i want this...

Day One - Jami




Oh . . . day one. Never a fun day! Today was the day I jumped back on the wagon. Who knows what our blog will turn into, but what the heck . . . here I go!! My goal for the next 3 months is to become rededicated to lose additional weight, help motivate my awesome brother and beautiful inside and out sister in law, and anyone else who wonders how I've lost weight or wants to lose some of their own.

First of all, I slept in today. NORMALLY, I would have run this morning (on a really good day) been at work all day, and then yoga at 5:30, RUSHING IN RUSH HOUR!! Everyone needs yoga after that!! But today, was not that day. I slept in, not too late . . . maybe snoozed 5 times!! Did not run intervals, but did make it to work with my protein shake, microwave bacon, and appples for a snack. I was off to a good start with two slices of bacon, chocolate protein shake (thank you Metagenics) and green tea.

I ran to meet Cody at the dentist around 11. He is thinking about doing invisalign, which WOW what a ton of work before you actually decided to do it! He had a photoshoot, impressions and lots of chairtime. We left the office so hungry, we could not decide on lunch. Earlier in the day I was planning on a healthy salad, but without my snack ( I forgot it at work) I was starved. SO, we finally decided on Bill and Ruth's. Small ham with cheese on wheat. Water to drink, no chips.

Cody and I shopped the rest of the afternoon in south tulsa. On our way home, about 5:30 . . . yep, I missed yoga, we tried to decide on dinner. We decided on fresh guacamole and chicken burritos. Our grocery list was: Wholly Salsa, lettuce (spinach, iceberg or romaine), 1 lime, 2 roma tomoatoes, one red onion, one white onion, 1 red bell pepeer2 soft avocadoes, one block of cheddar cheese, one chicken breast, 1 bag of yellow corn chips, whole wheat tortillas, sour cream, and two cans of pinto beans. When we got home, cody chopped the tomatoes, red onion, lettuce and avocados. I shredded the cheddar cheese, combined the gucamole ingredients, heated and mashed the beans and heated the tortillas. Cody had cut the white onion and red bell pepper in halves for the grill. We always cover them in olive oil before placing on the grill. He grilled all three (veggies first) and we let them cool while we placed everything on the table. While he was grilling, I combined avocados, some chopped tomotoes, chopped red onion, one tbl spoon of mayo and two lime wedges for guacamole. It was yummy!! Total cook/prep time 20-30 minutes. The worst part was all the bowls from our ingredients to wash . . . thank you dishwasher.

All in all, a pretty good day one. Only one drink at dinner, then strictly mocktails the rest of the night. For tomorrow, I am planning on running at 5:15 in the morning, because I have work/school all day tomorrow. Let's hope I can be stricter tomorrow, oh by the way the burrito leftovers will make for a great taco salad tomorrow with salsa for dressing!!
